800 olive trees adorn the Corral de Tierra estate of Tom Russell, owner of De Tierra Vineyards. These trees, made up  of six different varieties of Tuscan  olives: Frantoio, Pendolino, Moraiolo, Canino, Leccino and Luca, are cultivated organically, using cover crops to  promote oil  improvement and organic  matter for fertilizer. The olives of  each healthy tree are  harvested by hand to protect the fruit, keeping each variety separate. Russell presses olives by variety, just once, at cold temperatures, using  an enormous imported Italian Pieraliti granite. Russell then blends the olive oil based on the  flavor profiles of each variety.

This oil is a brilliant golden color, clear to the eye. It has grassy, almost herbal notes on the  nose, with a lightly peppery finish. Sprinkle it over a freshly warmed baguette with a curl of Parmigianino-Reggiano, or mix it with OMG Balsamic for a simple lettuce dressing.
